CHICKEN SALTIMBACCO 
4 chicken breasts, boned, skinned
4 slices thin ham, lean
4 slices Mozzarella cheese
1 med. tomato, seeded and chopped
1/2 to 1 tsp. basil
1/2 c. bread crumbs
1/2 c. Parmesan cheese
2 tbsp. parsley

Pound down chicken breasts. Place ham, cheese, tomato, sprinkle with some of basil on each breast. Roll up breast, seal with toothpick. Roll breast in bread crumbs, Parmesan, parsley.

Bake-baking dish 40 minutes at 350 degrees.

You can vary this recipe widely by using Swiss cheese, Cheddar cheese or different herbs, sage, thyme, oregano, add garlic, onion.
