PECAN PRALINES 
2 c. light brown sugar
4 tbsp. water or milk
2 c. pecan halves
1 tbsp. butter
1 tsp. vanilla

Combine sugar and water in a heavy pot. Place on medium heat and stir until mixture comes to a boil. Add pecans and bring to a boil again. Remove from fire.

Add butter and vanilla and beat until it begins to thicken. Spoon out onto a buttered surface, about 1 tablespoon per praline.

In the French Quarter you could watch the ladies make this sweet treat. We always had to have pralines when we visited New Orleans.
