CHICKEN JUDITH 
2 chicken breasts, boned, skinned, and cut in half
1/4 lb. butter
2 cloves of garlic
1 c. fresh bread crumbs made in blender or food processor
1/4 c. grated Parmesan or Romano cheese
8 oz. Mozzarella cheese

Melt butter. Crush garlic and add to butter. Flatten chicken breasts. Make bread crumbs and mix grated cheese with crumbs. Cut Mozzarella into four 2 inch pieces. Dip chicken pieces into garlic butter and put both sides into bread crumbs. Put a piece of cheese in center of chicken. Press into a ball securing all around with bread crumbs. Put chicken pieces into a square baking dish so sides are touching. Drizzle remaining butter over chicken. Bake uncovered at 350 degrees for 1 hour. Serves 4.
