ZUCCHINI BREAD | |
2 c. sugar 1 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 3 c. plain flour 1 tsp. cinnamon 1 c. salad oil 3 eggs, slightly beaten 2 c. grated raw zucchini, drain any water 1 c. pecans or walnuts Mix oil, egg, sugar, zucchini, and vanilla together. Stir in flour, soda, baking powder, salt, and cinnamon. Stir in the nuts. Grease and flour 2 loaf pans. Bake at 325 degrees for 1 1/2 hours or until done. |
