NANCY'S JAN HAGEL COOKIES 
1 c. butter
1 c. sugar
1 egg, separated
1 tsp. almond flavoring
2 c. flour
1/2 c. sliced almonds
1 tbsp. sugar
1/4 tsp. cinnamon

Beat butter, sugar, egg yolk, almond flavoring and flour.

Spread with hands into ungreased 15"x10"x1" jelly roll pan. Dough should cover bottom of pan.

Beat egg white until foamy. Spread over dough. Sprinkle almonds over dough next. Then sprinkle with the sugar and cinnamon mixture.

Bake in 350 degree oven for about 10 minutes or until light brown. Cool on wire for ONLY TEN MINUTES. Immediately cut into 8 lengthwise strips. Then slice into diagonals. (The cutting is done while dough is still in pan.) Remove diamond shaped cookies from pan and cool on racks. Should make about 6 dozen small cookies.

Great recipe, but I find it takes 22 minutes or so to bake. I also appreciated a tip learned elsewhere to crumble the dough around in the pan - makes smoothing it over the entire surface easier.
