2 c. flour 2 tsp. baking powder 1/2 c. sugar 3 tbsp. butter 2 eggs 1 c. raisins 3 tbsp. milk Whipped cream Strawberry preserves Preheat oven to 400 degrees. Grease a cookie sheet. Combine flour, baking powder and butter. Mix together with fingers until the mixture resembles bread crumbs. Stir in the sugar, then the milk. Beat one egg then stir that in too. Finally, add the raisins. Form the mixture into a ball and knead 10 times. On a floured surface, roll to 1/2" thickness and cut with a round cookie cutter. Place on a cookie sheet and glaze tops by brushing beaten egg on them. Bake 10 to 12 minutes or until golden. When scones are cool, cut them into halves and serve buttered with strawberry preserves and whipped cream. |
