GROUND BEEF AND POTATO CASSEROLE 
1 lb. ground beef
1 chopped onion
1 can cream of mushroom soup
1/4 c. water, mixed in with soup
1/2 tsp. salt
1/4 tsp. pepper
3-4 med. potatoes, thinly sliced

Brown ground beef, salt, pepper and onions. Drain. Cover bottom of casserole dish with a layer of potatoes and a layer of ground beef.

Pour half of soup mixture over this. Add another layer of potatoes and ground beef. Add remaining soup mixture. Bake, covered, for 1 hour at 350 degrees.

I work at a Union Gospel Mission and I made this for about 50 to 60 people. I used sliced canned potatoes (as we didn't have fresh potatoes). I used the cream of mushroom soup and a couple cans of Campbell's cream of Bacon soup. And no bells in the house, so I put a small amount of sliced jalapenos to to add some flavor, but still not overtly hot. Turned out amazing, everybody loved it, Will make again for a bright spot in peoples lives. Thanks for the recipe :)

Great recipe, I mixed about 1/3 cup sour cream in the soup and water mix and seasoned the soup mixture instead of the meat. I also added a can of drained green beans to my soup mixture. Almost like a glorified green beam casserole, lol.

This is a great base recipe. It is tasty as is but you can also do so much to it! I added garlic salt to the meat and onion when cooking. Then I added a layer of corn and cubes of Velveeta Queso Blanco on top of each layer of the soup mixture. Gooey and good!

It sounded too boring,so I added 7oz. green chile on top of the potato layer. We happened to have 2 (10 oz. ?) small cans of potatoes, so I used them. I baked the casserole only 20 min. The dish wasn't very filling but, my family loved it!

Great recipe the way it is. The second time I made this I changed it a bit and had wonderful results. Instead of cream of mushroom soup I used Cambell's Nacho Cheese Soup and then I added a small can of diced green chills. Very good and completely different flavor.

We have a family of 4 with 2 hungry teenage boys. I changed the recipe some to perfection. I used a 10 x 13" glass dish and baked on 400°F 30 - 45 minutes until potatoes were tender. I added 2 cans of Cream of Mushroom with 1 1/2 can water. I also added one small can of sliced mushrooms. I sprinkled some dried Thyme between the layers and topped with bacon bits. YUMMY!!!!

It was a great surprise to find this recipe. It really is excellent - comfort food! My Mom used to make this. To add an extra bit of flavor, try adding sliced carrots to each layer.
