CAJUN RICE 
1 medium onion, chopped
2 tbsp. vegetable oil
1(10 3/4 oz.) can chicken broth
1 large green bell pepper, sliced
1 1/2 tsp. chili powder
1/2 tsp. dried thyme
1/4 tsp. paprika
1/8 tsp. cayenne pepper
1 1/2 c. uncooked instant rice

Saute onion in oil. Stir in chicken broth, green pepper, chili powder, thyme, paprika and cayenne pepper. Mix well. Cook a few minutes so flavors blend. Stir in raw rice. Remove from heat; cover and let stand 5 minutes. Fluff with fork and serve.
