HUMMINGBIRD CAKE 
1 c. cooking oil
2 c. sugar
2 eggs
1 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 c. chopped pecans
1/2 c. coconut
1 tsp. cinnamon
1/2 tsp. salt
1 (8 oz.) can crushed pineapple
2 diced bananas

Mix oil, sugar, eggs and vanilla well. Add sifted dry ingredients and mix well. Add fruit, do not drain. Bake in a greased and floured tube or bundt pan at 300 degrees for 1 hour. Do not use mixer! Cool before removing from pan.
