APRICOT - BANANA TEA BREAD 
2/3 c. shortening
1 c. sugar
2 eggs
1 1/2 c. mashed ripe banana
1 tbsp. lemon juice
1 3/4 c. flour, unsifted
1 tsp. EACH baking soda & salt
1/2 c. chopped, dried apricots mixed with 1 tbsp. flour

Cream shortening with sugar with an electric mixer. Beat in eggs, one at a time beating well after each addition. Blend in bananas and lemon juice. Mix flour, baking soda and salt. Blend this into banana mixture, stir in apricots. Turn into a greased and floured loaf pan. Bake at 325 degrees for 1 hour 10 minutes or until a pick inserted in the center comes out clean. Remove from pan and cool completely.
