POSH SQUASH 
1 qt. zucchini, cubed
1 sm. onion, chopped
1/4 c. green pepper, chopped
1 c. mayonnaise
2 eggs
1/2 tsp. basil or thyme (I use thyme)
1/4 c. Parmesan or other grated cheese

Saute onion and green pepper until slightly tender. Add squash, stir and fry and steam until moisture is almost gone and it's semi tender. Pour vegetables into large pie pan.
