OVEN FRIED CHICKEN 
3/4 c. skim milk
2 tbsp. lemon juice
1 c. flour
1/4 tsp. freshly ground pepper
6 tbsp. butter, melted
1 broiler fryer chicken, cut in parts and skin removed
1 1/2 c. corn flakes, crushed
Vegetable cooking spray

Mix milk and lemon juice in bowl and allow to thicken. Combine flour and pepper; pour onto wax paper. Dip each chicken piece separately in melted butter; then roll in flour mixture and dip in milk-lemon juice mixture. Roll in crushed corn flakes. Coat rack and baking pan with vegetable spray. Arrange chicken on rack and bake in preheated oven at 350 degrees for about 1 hour or until fork can be easily inserted into chicken and juices run clear. Makes 6 servings. 380 calories each.
