APRICOT OAT MUFFINS 
1/2 c. orange juice
1 c. dried apricots, chopped (easily done in food processor)
1/4 c. brown sugar
1 c. oat bran
1/4 c. wheat germ
3/4 c. whole wheat flour
2 tsp. baking powder
2 tbsp. olive or sunflower oil
1/2 c. skim milk
1 egg

Preheat oven to 400 degrees. Grease a 12 cup muffin tin with butter. In small saucepan, heat orange juice until boiling. Mix in apricots and brown sugar. Remove saucepan from heat and cool apricot mixture slightly.

In a medium bowl combine oat bran, wheat germ, whole wheat flour and baking powder; set aside. In a mixing bowl beat together oil, skim milk and egg. Add dry ingredients and apricot mixture to milk mixture and mix until moist. Fill muffin tins and bake for 15 minutes or until golden brown and cake tester comes out clean.
