APPLE - BUTTERSCOTCH BARS 
1 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. salt (opt.)
1/4 c. reduced calorie butter
1/2 c. firmly packed brown sugar
1 c. unsweetened applesauce
1 tsp. vanilla extract
1 c. finely chopped, unpeeled cooking apple
1 c. currants
1/2 c. reg. oats, uncooked
1/3 c. butterscotch morsels
Veg. cooking spray

Combine both flours, soda, cinnamon, cloves and salt, stir well. Cream butter in a large bowl, gradually add sugar, beating at medium speed, until fluffy. Add flour mixture to creamed mixture alternately with applesauce, begin and end with flour mixture. Stir in vanilla. Stir in apple and next 3 ingredients. Pour into 11 x 7 x 2 inch baking dish coated with cooking spray. Bake at 350 degrees for 40 minutes. Cool. Yield: 2 dozen.
