APPLE AND BUTTERSCOTCH COOKIES | |
1 lg. apple or 1 1/2 med. apple 3 tbsp. sugar 3 tbsp. brown sugar 1 tbsp. water 1 1/2 tbsp. flour 2 c. plain flour 1/2 tsp. baking soda 2/3 c. butter, softened 2/3 c. brown sugar 2 med. eggs 1/2 tsp. almond flavoring 1 tsp. vanilla 1 c. chopped nuts 1 c. butterscotch chips Peel and cut in small pieces apple. Cook with 3 tablespoon sugar, and 2 tablespoon brown sugar and 1 tablespoon water. Cook until tender and add 1 1/2 tablespoon of flour. Cook until thickens, let cool. In large bowl with electric mixer. Mix sugar, butter and eggs until creamy. Add flour, soda and flavoring. Add cooked apples and mix well, stir in crushed O.S.H. cereal, nuts and butterscotch chips, mix well. Drop by teaspoons on a greased cookie sheet. Sprinkle a few Poppyseeds on top of each cookie. Bake at 350 degrees about 8 minutes or until they start to brown around the edges. Be sure not to overcook them. |
