HOT SALMON MELTS 
1 can (15 oz.) salmon
1/3 c. mayonnaise
2 tbsp. each minced pimento and parsley
2 tsp. lemon juice
3/4 c. shredded cheddar cheese
4 slices of French bread or 2 English muffins split

Drain salmon, break into chunks. Add mayonnaise, parsley, pimento, onion, lemon juice, and dash of pepper. Toss gently to mix. Fold half of the cheese. Spread on the bread or muffin half, sprinkle with remaining cheese. Broil 6 inches from heat 3 to 4 minutes, or until cheese melts and top is golden brown.
