OPEN OMELET MEXICALLI 
2 pieces toast
1 lg. egg
1/3 c. grated Cheddar or Mozzarella cheese
1/4 c. picante sauce
1/4 c. chopped ham

Make omelete, then before serving pour picante sauce over omelete. Flip 2 times. Cut in half. Put each half on piece of toast.
