GREEN CHILE OMELET 
4 eggs, separated
1/2 c. grated Mozzarella cheese
1 tbsp. butter or oil
1 can long green chilies, cut in half length wise
Salt and pepper to taste
1 c. Picante sauce, used as garnish

Beat egg whites until they form stiff peaks. Beat egg yolks with salt and pepper until light lemony color. Fold together gently. In skillet or omelet pan melt butter or oil and line bottom of skillet with green chilies. Cook on low heat until omelet is almost cooked through then put cheese on top of omelet and put in preheated 350 degree oven for 10 minutes. Omelet should be light and fluffy in texture. Serves 3 to 4.
