BREAKFAST PUFFS 
1 1/2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. ground mace
1/2 c. sugar
1/3 c. cooking oil
1 egg
1 tsp. vanilla
1/2 c. milk
1/2 c. sugar
1 tsp. ground cinnamon
6 tbsp. melted butter

In a mixing bowl stir together flour, baking powder, 1/2 teaspoon salt and mace. In separate bowl beat together 1/2 cup sugar, cooking oil, egg and vanilla for 30 seconds. Add flour mixture and milk alternately to egg mixture, beating on low speed after each addition, just until combined.

Fill 10 muffin cups (greased) 2/3 full. Bake at 350 degrees for 15-20 minutes or until tops of muffins are firm and golden. Meanwhile, in a shallow bowl, combine the remaining 1/2 cup sugar and cinnamon. Remove muffins from cups while still hot. Roll in melted butter, then in sugar mixture. Serve immediately. Makes 10.
