CHICKEN CROQUETTES 
2 c. chicken, chopped
3/4 tsp. salt
1 tsp. chopped onion
3 tbsp. parsley
1 c. white sauce
Dash pepper
1 c. dry crumbs
1 egg, slightly beaten
2 tbsp. water
Oil for frying

Combine chicken, salt, onion, parsley with white sauce. Chill. Form into cylindrical forms. Roll in crumbs; then egg and water mixed together. Then roll back in crumbs. Let stand awhile. Heat oil. Cook about 1/2 minute on each side or until golden brown. Drain on paper.
