ZUCCHINI BREAD 
3 c. self-rising flour
2 c. grated zucchini
2 tsp. vanilla
1 c. chopped pecans
3 tsp. cinnamon
3 eggs
2 c. sugar
1 c. oil

Combine flour and cinnamon. Beat eggs until light, add sugar, oil, zucchini and vanilla. Add dry ingredients and nuts. Pour into greased bread pans and bake at 350 degrees for 45 minutes.
