ONE PAN PINEAPPLE CAKE 
1 c. crushed pineapple, 20 oz.
2 eggs, beaten
2 c. flour
2 c. sugar
1/2 tsp. salt
2 tsp. baking soda
1 tsp. vanilla
Chopped nuts

Mix all ingredients in a 13x18 pan. Scrape sides down good. Bake at 350 degrees, 35-40 minutes. Cool. Cover with cream cheese frosting.

CREAM CHEESE FROSTING:

8 oz. cream cheese, softened
1 stick butter, softened
1 tsp. vanilla
1 1/2 c. or more powdered sugar

Beat butter, cream cheese and vanilla together. Add powdered sugar and beat. Will be runny. Pour onto pineapple cake and spread over.
