BARBECUE PORK 
4 to 5 lb. rib roast, loin end
2 tbsp. flour
1 1/2 c. catsup
1 med. green sweet pepper
1/2 lg. onion, chopped fine
1/2 c. celery, chopped
1 tsp. mustard
2 tsp. brown sugar
Salt

Roast meat in 350 degree oven (30 minutes for each pound.) Rub with salt and pepper before putting in oven. Do not use water in pan. When done, pour off excess fat. Let meat cool before slicing. To about 4 tablespoons fat left in pan, add flour and enough water to make a smooth brown gravy. (Or use a jar of brown gravy.) Add catsup, green pepper, onion, celery, mustard, brown sugar, and salt. Simmer until vegetables are tender crisp. Slice pork in thin slices and heat in the sauce. Spoon onto large burger buns.
