APRICOT MUFFINS 
1/2 c. butter
1 c. sugar
1 c. sour cream
2 c. flour
1 tsp. baking soda
1 tsp. salt
3 tbsp. lemon peel
1 c. chopped dried apricots
1/2 c. nuts

Cream butter and sugar; add sour cream, flour, soda, and salt. Fold in peel, plumped diced apricots. (Let apricots stand in hot water for 5 minutes.) Add nuts. Bake at 375 degrees for 12-15 minutes. 28 medium size muffins
