APRICOT BRAN MUFFINS 
2/3 c. minced dried apricots
Boiling water
1/2 c. sugar
1 c. flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
1 c. bran
3/4 c. milk
1/4 c. salad oil

Cover apricots with boiling water and allow to stand about 10 minutes; drain.

Mix 2 tablespoons sugar with apricots. Mix and sift flour, baking powder, salt and remaining sugar.

Beat egg, add remaining ingredients, then add to sifted ingredients and blend lightly (about 25 strokes). Bake in greased muffin pans (1 3/4 x 1 inch) in preheated oven 400 degrees F. about 20 minutes. Yield 1 1/2 dozen.
