APRICOT MUFFINS 
1 c. dried apricots, cut up
1 c. boiling water
1/2 c. butter
1 c. sugar
3/4 c. sour cream
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts

TOPPING:

1/4 c. sugar
1/4 c. orange juice

In small bowl combine apricots and water. Let stand 5 minutes. Drain well and set aside.

In large mixing bowl cream butter and sugar until fluffy. Add sour cream and mix well. Combine dry ingredients and add to butter mixture. Mix on low only until combined. Fold in nuts and apricots. Batter will be very stiff.

Spoon into well greased muffin tins filling each cup most to top. Bake at 400 degrees for 18-20 minutes or until done. Combine sugar and orange juice. Pour over warm muffins. 12 muffins.
