APRICOT APPLE MUFFINS 
4 c. all-purpose flour
2 tbsp. baking powder
3 tbsp. brown sugar
2 eggs, slightly beaten
2 c. half & half milk
1 c. melted butter
2 apples, unpeeled, grated
1 c. chopped apricots
1/2 c. bran cereal

1. Combine flour, sugar, baking powder and salt; mix well.

2. In separate bowl stir together eggs, half and half and cooled, melted butter.

3. Add apples, apricots and bran cereal to dry ingredients.

4. Add egg mixture to dry ingredients, stir only until moistened. Do not over mix, batter would be lumpy.

5. Fill greased muffin tins about 3/4 full.

6. Bake at 375 to 400 degrees for 15 to 20 minutes until lightly browned and done. 7. Serve muffins hot from oven.
