CARAMEL CORN 
2 c. brown sugar
1/2 c. clear corn syrup
2 sticks butter
1/2 tsp. salt
1/2 tsp. vanilla
1/2 tsp. maple flavoring
1 tsp. baking soda
6 qt. popped popcorn
1/2 c. peanuts, pecans, or walnuts (amount as desired)

Bring sugar, syrup, and butter to a boil. Boil 5 minutes, do not stir. Take off stove and add salt and vanilla and maple flavoring and baking soda. Stir well, it gets foamy. Pour over popcorn and nuts; mix with wooden spoon.

Bake in large roaster in oven for 45 minutes. Stir every 10-15 minutes. Dump out on wax paper and spread it out until it cools.
