BROCCOLI & RICE CASSEROLE 
1 bag Minute Rice (boil in bag)
2 boxes frozen chopped broccoli
1 block of Velveeta cheese
Town House crackers
2 sticks of butter

Cook rice and broccoli separate. In 2 quart shallow glass baking dish place rice, layer with cheese, layer with broccoli and another layer of cheese. Melt butter. Crumble enough crackers to absorb butter (about 1 1/2 packs of crackers). Spread on top of casserole. Refrigerate about 1 hour before baking. Preheat oven to 300 degrees. Bake about 20 minutes or until crackers appear crisp.
