1 1/4 c. instant potatoes
1 1/3 c. Bisquick
1 c. sugar
1 stick butter
1 egg, beaten
1/2 c. shredded coconut

Mix potatoes, Bisquick and sugar. Add butter, melted. Beat in egg and add coconut. Drop by teaspoon on ungreased cookie sheet. Bake 10 minutes at 350 degrees.
