SPINACH SOUFFLE | |
3/4 c. chopped cooked spinach 2 tbsp. flour 1/2 c. sharp grated cheese 1/2 tsp. salt 3 egg whites, beaten 2 tbsp. butter 1/2 c. milk 3 egg yolks, beaten 1/2 tsp. pepper Make cream sauce using butter, flour and milk. Add spinach, cheese, beaten egg yolks, salt and pepper; mix well. Whip egg whites and fold into mixture. Pour into buttered pan and set in hot water in 350 degree oven and bake for 30 minutes. Let stand for 5 minutes after you take out of the oven. |
