SPINACH QUICHE 
1 pkg. spinach, cooked & drained
5 eggs
1 med. can evaporated milk
1/2 lb. grated Swiss cheese
1/2 c. Parmesan cheese
1 sm. onion, chopped fine

Prebake pie shells about 5 minutes. Saute drained spinach and onion in butter. Beat eggs, milk, salt, pepper, cheese and 1/2 of the Parmesan. Mix with spinach and pour into pie shell. Sprinkle rest of Parmesan on top. Bake at 350 degrees for about 45 minutes. LEt set 5-10 minutes before serving. Makes 2 pies.
