LOTTA LEMON MUFFINS 
1 3/4 c. flour
3/4 c. sugar
1 tbsp. grated lemon peel
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1 (8 oz.) carton lemon yogurt
6 tbsp. melted butter
1 egg
1 tbsp. fresh lemon juice

GLAZE:

1/3 c. fresh lemon juice
1/4 c. sugar
2 tsp. grated lemon peel

Preheat oven to 400 degrees. Line muffin cups with paper liners.

Mix first 6 ingredients and make well in center. Beat egg, yogurt, butter and lemon juice and pour in well. Stir into dry ingredients until just blended (will be lumpy).

Spoon into cups 2/3's full. Bake until golden brown, about 20 minutes. Cool 5 minutes. Prepare glaze; heat in microwave until sugar dissolves. Pierce muffins with 6-8 holes and drizzle with hot glaze.

Since microwave ovens vary in power, you may need to adjust your cooking time.
