CATHY'S CHICKEN AND BROCCOLI 
2 lb. boneless chicken, cut into chunks
2 tbsp. oil
1 tsp. minced garlic
1/2 tsp. black pepper
1/2 tsp. onion powder
1/4 tsp. salt or MSG
2-3 tbsp. soy sauce
Chicken broth or water
5-6 c. broccoli, cut in bite size pieces, stems peeled and cut up
1 sm. can sliced water chestnuts
2 tsp. Maggi seasoning - found in any Asian or oriental store (optional)

Heat oil in 4 quart pan, add garlic and chicken. Cook until chicken is no longer pink. Meanwhile, cook broccoli in covered bowl with 1/4 cup water in microwave 5 minutes on high. Add broccoli (undrained) and water chestnuts (not drained) to pan. Add 1/2 cup chicken broth (or water). Add rest of ingredients.

Cook approximately 3 minutes more, stirring constantly. Mix together in small bowl - 1/4 cup water and 1 heaping tablespoon cornstarch; add to pan and mix well. Heat thoroughly. Serve with steamed rice, use tomato slices for garnish on dishes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
