ITALIAN PORK AND RICE CASSEROLE 
5 or 6 med. onions, sliced
1 clove of garlic
4 tbsp. oil
1 can beef broth
3 (8 oz.) cans tomato sauce
1 (3 oz.) can whole mushrooms
2 tbsp. minced parsley
1 (3 lb.) pork loin, cut into 1/4-inch slices
1 1/4 tsp. salt
1/4 tsp. pepper
2 c. rice
3 green peppers, chopped

Saute onions and garlic in 2 tablespoons oil in skillet until golden; discard garlic. Add next 4 ingredients; mix well. Simmer 1 hour. Season pork with salt and pepper. Brown in remaining oil in skillet. Alternate layers of pork, rice, sauce, green peppers and onions in 3-quart casserole until all ingredients are used, ending with sauce. Bake, covered, at 350 degrees for 1 1/4 hours or until pork and rice are tender.
