TANGY CHICKEN | |
8 pieces chicken (preferably breasts) Mushrooms (black olives or artichoke hearts can be added) 1/2 mayonnaise, light (as desired) 1/4 c. orange juice 1/2 c. yogurt I vary amount of: Sour cream (light) is optional Rosemary, strong herb Basil, twice as much as rosemary Brown chicken and mushrooms. Place in casserole dish. Mix rest of ingredients and pour over chicken. Bake at 350 degrees covered for 45 minutes, uncovered for 15 minutes. For not so "tangy" chicken, use less yogurt and orange juice. |
