HAWAIIAN RICE SALAD 
1 lg. or 2 sm. cans pineapple chunks
3 c. rice, cooked
1/4 c. almonds, sliced
1/4 c. sour cream
1/4 tsp. salt
1/4 c. flaked coconut
1/4 c. Maraschino cherries, chopped
2 tsp. sugar

Drain pineapple, reserving 1/4 cup juice. Cut pineapple chunks in half. Combine rice, pineapple, coconut, almonds and cherries in mixing bowl. Blend sour cream, sugar, salt and reserved juice. Pour over rice mixture, toss lightly. 6 servings.

I love this recipe but I like give it a bit of my own touch. Instead of the dressing (sour cream, salt, sugar and juice) I use coconut creme and pour it over the rice mixture just before serving. Instead of Maraschino cherries, yellow raisins are great too!
