GERMAN SWEET AND SOUR RED
CABBAGE
 
Red cabbage, sliced
1 onion, diced
3 apples
1/2 c. vinegar
1/2 c. sugar
1/2 c. water
1 tbsp. caraway seed

In a large kettle, gently brown one diced onion in oil. Then add red cabbage, cut in 1 inch slices from the top. Add 3 cooking apples, pared and quartered. Simmer until cabbage is tender with the lid on the pan. When tender, add 1 tablespoon caraway seed and a mixture of 1/2 cup water, 1/2 cup sugar and 1/2 cup vinegar. Simmer for 10 minutes.
