CHINESE POTATO SALAD 
3 c. red potatoes, cubed, skin intact
3/4 c. minced red bell pepper
1/2 c. minced celery
1/4 c. finely chopped green onions
1/4 c. rice wine vinegar
2 tbsp. sesame oil
1 tsp. grated fresh ginger
1 tsp. honey
1 tbsp. lemon juice
1 tbsp. Hoisin sauce
1/4 tsp. cayenne pepper, or more to taste

In a large pot over medium-high heat, cook potatoes until tender (about 20 minutes). Drain and chill for 20 minutes.

In a salad bowl combine red bell pepper, celery, green onions, vinegar, oil, fresh ginger, honey, lemon juice, Hoisin sauce, and cayenne. Add chilled potatoes and toss well. Cover with plastic wrap and set aside to marinate at room temperature for 20 minutes more. Serve at room temperature.

Serves 4.
