FRIEND MIRIAM'S GERMAN POTATO
SALAD
 
2-3 med. onions, chopped
6-8 stalks celery, chopped
5 lbs. potatoes, boiled in their skin (red or new potatoes are the best)
1 lb. bacon, cooked and drained
1 1/2 c. water
1/2 c. sugar
1/2 c. apple cider or vinegar
2-3 tbsp. flour

Cut potatoes in cubes or slices. Combine vinegar, sugar, and 1 cup water. Heat this mixture and then slowly add 1/2 cup water and flour. Crumble bacon and add to mixture. Pour over potatoes, onions, and celery. Season to taste and serve warm.
