FISH CHOWDER 
1 lb. cod fillets (or other white fish like sole, haddock. Frozen fish is fine partly defrosted)
1 1/2 lbs. potatoes, peeled or unpeeled, thinly sliced
1 lb. onions, thinly sliced
4 to 6 tbsp. butter
Salt (opt.)
Pepper, Paprika to taste
4 c. milk

Grease a deep casserole thoroughly with butter. Place a layer of fish in bottom, cover with a layer of potatoes and onions. Dot with butter, sprinkle with pepper and paprika. Then add another layer of fish, onions and potatoes. Top layer should be all potatoes. Dot with butter and season. Pour the milk over all and place in 350 degree oven. Cook for 40 to 45 minutes or until milk is bubbling and top layer is done. Serves 4.
