NEW ENGLAND BLUEBERRY COFFEE
CAKE
 
1 1/2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. fresh blueberries (or 1 1/4 c. thawed frozen blueberries)
1 egg
1/2 c. milk
1/4 c. butter, melted

TOPPING:

1/4 c. butter
1/2 c. packed brown sugar
1 tbsp. flour
1/2 c. chopped nuts

Heat oven to 425 degrees. In large bowl, combine flour, sugar, baking powder, cinnamon and salt. Gently fold in blueberries. In a small bowl, whisk together egg, milk and butter. Add to flour mixture. Stir carefully. Spread into greased 8 x 8 inch baking pan.

Combine topping ingredients and sprinkle over batter. Bake for 20-25 minutes or until top is light brown. Serve warm or at room temperature. Yield 12 servings.
