PICNIC CUPCAKES 
1 egg
1/3 c. sugar
3 c. flour
2 c. sugar
1/2 c. cocoa
2 tsp. baking soda
8 oz. cream cheese
12 oz. chocolate chips
2 c. water
2/3 c. oil
2 tsp. vanilla
1 tsp. salt

Combine egg, cream cheese, 1/3 cup sugar. Add chips and set aside. Mix dry ingredients. Add oil, water and vanilla. Fill muffin tins 1/2 to 3/4 full. Spoon 1 teaspoon to 1 tablespoon cream cheese mixture on the top. Bake 350 degrees for 20 minutes. Makes 30 to 36 cupcakes. No frosting necessary.
