ZUCCHINI BROWNIES 
2 c. zucchini, peeled & shredded
2 c. flour
1 egg
1 1/4 c. sugar
1 tsp. salt
1/2 c. oil
1/2 c. cocoa
1 1/2 tsp. baking soda
2 tsp. vanilla
1/2 c. nuts (opt.)

Mix zucchini, oil, egg, and vanilla. Add dry ingredients and mix; do not beat. Add nuts if desired. Bake 30 to 35 minutes at 350 degrees in greased 9"x13" pan. While warm, top with icing.

ICING:

1 1/2 c. sugar
6 tbsp. evaporated milk
6 tbsp. butter
3/4 c. chocolate chips

Melt butter. Add milk and sugar. Boil for 1 minute. Remove from heat and add chocolate chips. Stir until thick and spread over warm brownies.
