LO-FAT STUFFED BAKED POTATOES 
2 c. Idaho potatoes, baked
1/4 c. low-fat cottage cheese
1 tsp. chopped fresh chives
White pepper

Preheat oven to 325 degrees. Cut potatoes in half and carefully scoop out the pulp. Reserve 2 of the skins. Whip cottage cheese until smooth in a blender or food processor. Combine potato pulp, cottage cheese, chives, and pepper and blend well. Stuff into potato skins. Bake until heated through, about 20 minutes.
