PEACH OF A RICE PUDDING 
2/3 c. Minute Rice
1 2/3 c. milk
1/2 tsp. salt
1/3 c. sugar
Sliced peaches

Combine first three ingredients in an uncovered saucepan and bring to a full boil. When boiling, cover and remove from heat. Let stand 5 minutes, fluffing rice a couple times with a fork. Mix in the sugar.

Put in sauce dishes and top with sliced peaches before serving. Recipe makes about 6 servings.
