HAM - NOODLE BAKE 
1/2 c. onion, chopped
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
1 3/4 c. milk
2 c. ham, cubed
1/2 c. Swiss cheese, shredded
4 oz. egg noodles (dry)
2 tbsp. grated Parmesan cheese

Melt butter in saucepan and saute onions until tender. Stir in flour, salt, pepper and dry mustard. Cook until bubbly; remove from heat. Stir in milk. Return to heat. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in ham and Swiss cheese. Remove from heat. Cook noodles; rinse and drain. Stir into ham and cheese mixture. Pour into 1 1/2 quart casserole. Sprinkle with Parmesan. Bake uncovered at 350 degrees for 20 minutes or until bubbling and golden brown. Serves approximately 6 (1/2 cup) servings.
