SOUTHWESTERN STUFFED CHICKEN
BREAST
 
1 c. grated Cheddar cheese
1 c. grated longhorn Colby cheese
1 c. grated American cheese
1/2 c. finely chopped onion
4 whole chicken breasts, boned, skinned, and halved
2 c. corn chip crumbs
2 tsp. cayenne pepper
1/4 tsp. cumin ground
4 jalapeno peppers, optional

Pound the chicken breast halves until 1/4 inch thick. Mix cheeses and chopped onion thoroughly. Place equal amounts of the cheese onion mixture on center of each breast, roll breasts around mixture and pin with toothpicks. Combine corn chips crumbs, pepper, and cumin sprinkle in shallow wide mouth bowl. Coat each breast with corn chip mixture using either milk or egg white as binding agent. Bake with seams down in 350 degree oven for 35 to 40 minutes until the cheese mixture is melting out of the seams of the majority of the breasts.

For spicier taste slice jalapeno peppers lengthwise and place in center with cheese mixture.
