MACARONI ITALIANO 
1/4 c. butter
1/2 c. chopped onion
1/2 c. chopped celery
1 garlic clove, crushed
3 1/2 c. water
1 can (6 oz.) tomato paste
1/2 lb. long macaroni
1 tsp. salt
1 tsp. sugar
1/4 tsp. dried oregano
1/2 tsp. dried basil
1/2 c. chopped fresh parsley
2 c. sm. curd cottage cheese
1/2 c. grated Parmesan cheese

Lightly butter 1 1/2 quart baking dish. Preheat oven to 350.

Melt butter in a large skillet; saute onion, celery and garlic until tender. Stir in water, tomato paste, macaroni, salt, sugar and herbs. Cover and simmer, stirring occasionally 25 minutes or until macaroni is tender. Stir in parsley.

Turn half the mixture into buttered baking dish, top with 1 cup cottage cheese and sprinkle 1/4 cup grated Parmesan on top. Repeat layers. Bake 15 minutes.
