Potatoes 400 degree vegetable oil Boil or microwave potatoes until done. Peel potatoes, cut any large potatoes in half. Heat oil in deep fryer to 400 degrees. Fry a few at a time in hot oil until golden brown. Drain on paper towels. Oil is so hot, potatoes crust over and do not absorb oil |
